Dough Fundamentals
Understanding dough structure, development and the role fermentation plays in the final pizza.
Pizza by Culinarte worked directly with the Burger 53 team in Dar es Salaam, Tanzania, developing practical capability across dough, Pizza Napoletana and Pizza e Pala through hands-on professional training.
The Burger 53 engagement was designed around practical team capability. The objective was to work directly with the restaurant team and develop their understanding of two distinct pizza formats: Pizza Napoletana and Pizza e Pala.
That meant going beyond finished recipes. The team needed to understand how dough behaves, how each format differs, how handling influences the final result and how preparation, topping and baking come together in a real kitchen.
The goal of professional pizza training is not for the consultant to make the best pizza in the room. It is for the team to be able to reproduce the product after the consultant leaves.
Training was therefore built around repetition, practical execution and direct interaction with the products the team would need to make themselves.
Professional training works best when each stage of the product connects to the next. The Burger 53 program focused on building practical understanding rather than memorising isolated steps.
Understanding dough structure, development and the role fermentation plays in the final pizza.
Connecting time, temperature and dough condition so the team could better understand how fermentation affects handling and bake.
Practical training in shaping, topping, handling and baking the round pizza format.
Developing a second pizza format with its own approach to dough handling, shape, toppings and service.
Moving from demonstration into repeated team production so learning became practical rather than theoretical.
Building confidence through hands-on preparation, correction and repetition within the working kitchen.
Pizza Napoletana and Pizza e Pala may share ingredients and dough principles, but they require different handling, shaping and service thinking. The team worked practically across both formats.
Round pizza training focused on dough behaviour, opening, topping balance and practical bake execution.
Repeated production allowed the team to see how small differences in handling, topping and bake affect the finished pizza.
The objective of professional training is knowledge transfer. Technique has to move from demonstration into the hands of the operating team so the product can become part of normal production rather than remain a one-time workshop result.
Team development is one part of a complete pizza operation. The training therefore connected product knowledge with production, people and repeatable execution.
Understanding the role each pizza format plays within the restaurant's food offering.
Developing the team's understanding of dough, toppings, structure and finished pizza quality.
Connecting preparation, dough handling and bake execution inside the working kitchen.
Transferring knowledge directly to the team through hands-on learning and repetition.
Developing greater consistency by helping the team understand why each production step matters.
Building knowledge within the operation so execution does not remain dependent on one external trainer.
Training across multiple pizza styles requires more than changing shape. Each format has its own production logic, handling requirements and service application.
Pizza e Pala gave the team an opportunity to work with a different format while applying the same core principles of dough understanding, fermentation and controlled execution.
Working with the product directly in the kitchen allowed training to remain connected to the environment in which the team would eventually execute it.
The Burger 53 project demonstrates the purpose of professional team training: moving product knowledge from the trainer into the people responsible for executing the pizza every day.
The working sessions included dough preparation, product trials, baking, tasting and repeated execution across the formats being introduced.
Burger 53 demonstrates the people side of the Culinarte Pizza System™. The value of training is not the demonstration itself, but the transfer of understanding that allows a restaurant team to continue producing, learning and improving after the consulting engagement is complete.
Pizza by Culinarte delivers professional pizza training for restaurant teams, hotels, resorts, pizzerias and foodservice businesses across India and international markets.
